Black Pepper and Garlic Crusted Strips

I had a couple of Prime strip steaks to grill so I seasoned them with a nice coat of black pepper and garlic powder. Put them on the Keg to cook at about 600* and it wasn't long befroe it was time to eat. I cut one of the steaks in two for my daughter and wife to share.

Of course a little compound butter was used to make them even more delicious.

Those black beans and Mexican rice I used with last weeks fish tacos were so good I had to make it again.

I was looking back at these pictures this morning and that meal was so darn good! Mmmmmmmm..................
 
This one is my favorite but I don't measure precisely.

1/4 lb softened sweet cream butter(this is better than using salted butter, believe me!)
3 toes garlic crushed
2 or a tad bit more Tblsp. finely diced shallots
fresh cracked pepper
flaky kosher salt
dried parsley

Mix all ingredients in a bowl with a fork and set aside until ready to put on you hot grilled steak. You can refrigerate any leftover for next use.
 
Sounds good there Traegernator, one observation though, I would drop the parsley, and replace it with some basil, thyme, or some rosemary, you will get a more fragrant flavor. Parsley is a very, very, very mild leafy ingredient, most time it is just used as a garnish. It has almost no flavor. Try using fresh too, you would have to use double the amount, but would be worth it since you are putting other fresh ingredients like shallots. You would achieve a much fresher taste.
 
I agree with you but with the parsley I don't want a strong flavor there and ona good steak I prefer it not be too herby tasting. Actually just the scallions, garlic, salt and pepper are good enough.
