Big Hunk O Meat

Went to buy a beef brisket the other day and bought what I believe is a roast of some sort. The guys at my local market do not speak english and the cuts not your typical affair. Anyway it looked a bit like a brisket so we went for it.

Final smoke with onion skins and thyme. Not sure how well this stood up to the rub and hickory but I will smoking a chicken in onion skins in the future.

Done!

Don't think it is a brisket. Looks more like a rib roast but I doubt the butchers would have mis priced something like that.

It looks darn good to me.

It was about $2.70 lb. If someone could tell me what a beef brisket is called in Spanish I could probably shop better for one.

It may be a chuck or shoulder roast cut differently.
It does look good

Nice to see the CG in action. Guess I should knock the dust off mine and give her a run.
