bacon, pork sausage, chicken, pistachios, etc

Saw this on the F-word on BBC. HAD to try it. He made it in a pan, I grilled. Came out simply maaahhh-velous.

Take a chicken leg quarter
Bone it out.
Mix pork sausage with fresh thyme, egg yolk, S&P, and roughly chopped pistachios.
On foil, lay down 3-4 slices of overlapping bacon.
Place thigh on bacon, sausage mix on the thigh, and roll up.

Poach until 130.
Place in fridge to set the bacon

Grill.

Thanks, I definitely do this one again. One thing they didn't specify was what kind of sausage. I didn't think Italian or sweet would work, so I used Johnsonville brat patties. Perfect...didn't even have to deal with a casing!
 
Scott, could you just use boneless chicken thighs? I can get those at BJ's by the case. It really looks great!!

I thought about using those, but liked the extra length that the drum leg gave. Two thighs would probably be too much.
