Cooked indirect with a dome temp of around 325-350* dome temp with some Susie Q's Santa Maria style seasoning and a hunk of red oak for smoke.Cooked the tri tip till around 115* and let her rest a little and ramped up the Weber to about 425* dome temp.

Cooked direct until internal temp was at 135*

Plated with some cheesy garlic bread and some grilled carrots and peppers.

Outstanding. I just picked up a 30 lb bag of red oak for $25 at the wood shed in orange. I'm doing one on Sunday. Looks great.
Try equal parts kosher salt, black pepper and fresh garlic made into a paste in a food processor. I love it. Suzy Q is great. Comes from Santa Maria area. The Rub Co makes a good Tri Tip rub too. Again, can never have too many tri tip posts!. :D
 
Can't find those at the mega mart anymore here. A few years ago they were pushing them like crazy. I miss the tri tip. :(

Dude what are you waiting for. Make sure you use Red Oak or you wont do it justice.
