Another cook on my little Davy Crockett Tailgater pellet grill...trimmed up a beef brisket, gave it a good rub, and then placed it over an open pan of Rick Salmons Pit Beans in the cooker. Those brisket drippings should really help season up my beans.

Set the cooker on smoke for the first couple of hours and then turned it up to 265 degrees to finish the cook.

For power, I used a jump starter for this 8 hour cook.

The brisket was looking good just before I put it into the foil along with some other goodies.

I pulled the beans after about 5-1/2 hours into the cook. Man, what a taste delight!!

The brisket took about 2 more hours to finish and then I sliced it up for my event.

I dribbled a little of the au jus from out of my foil over the meat just before I served it and it did come out very good.

I sure am enjoying this fine little pellet cooker and it is just a joy to use.
 
Rick Salmon's Blue Ribbon Pit Beans

Mr Bosko, here you go...

Rick Salmon's Blue Ribbon Barbeque Pit Beans

1 12-to-16 ounce bottle barbeque sauce (I use KC Masterpiece)
1/2 onion, finely diced
1/2 green pepper, finely diced
3 celery stalks, finely diced
8 tablespoons of prepared yellow mustard
2 tablespoons powered hickory seasoning (or bbq rub)
2 tablespoons celery seed
1 to 2 pounds of smoked pork or brisket
1 aluminum half steam pan (roughly a 9x13)
2 28 oz. & one 15 1/2 oz cans of Bushs original baked beans
About 1 pound brown sugar (or what ever it takes to adequately cover)
1: Put all the above ingredients in the pan. Mix well. Cover with brown sugar, about 1/2 to 1 inch thick and do not stir in the brown sugar. Put in smoker for about two to three hours at 200 to 225 degrees, I use hickory wood. Let the brown sugar melt down into the beans. Stirring it in is not necessary.
2: Can be done in the oven.
 
Fine looking groceries Sir! I am fighting with a big old brisket as we speak. Small world. Back when I had good intentions for cooking rotess chickens for comp I went to WW and bought a nice intverter to hook up to the 12 volt car battery with alligator clips. Never did use it much but should work well for your purposes. The test is if they can make a pot of Mr. Coffee. Thats apparently a big power drain. Never thought about a battery charger but bound to be the same principle for both gizmos. Now the truck driving baby boy has inverters in his sleeper that can run ACs..microwaves..etc. Doubt few hobbyists need power like that or have a large bunch of batteries to make it worky right.
