This is very easy to make and is an excellent side with Roast Beef.

Yorkshire Pudding....

3 eggs
1 cup flour
1 cup milk
1/4 tsp. salt
2 1/2 Tbl. beef fat from drippings

Heat oven to 440*

Put eggs, flour, milk & salt in Blender & mix until smooth.
Let rest for 15 mins.

Put the beef fat in a 12 inch (rim diam.) slant sided skillet
and melt fat in the oven until it is spittin hot.

Run the blender with the mixture for about 5 secs. more and pour
immediatly into the center of hot skillet.
Close oven door quickly and resist temptation to peak!
(glass door is a great option here)

Cook for 25 to 30 mins. until puffy and golden brown.

My chololesterol and triglycerides rose 10 points just looking at it. Dont even get me started on the glycemic index thang or the poisonous nature of white flour. I think only bloomin limeys eat that stuff.
