If you can find watermelon rind pickles, get em.
Wrap in prosciutto and secure with a toothpick.

Broil until the prosciutto just starts to get crispy.

Serve.

The cured ham and sweet pickle combo is fabulous. People will ask you about them, and then marvel at the ingrediants. They are addictive, and very easy to make.
 
Captain, I haven't had pickled watermelon rind in years! We used to eat it all the time when I lived in N.C.! Man is it good! If I ever come across some again, I'll give your recipe a try. How in the heck did you come up with that?
