These amounts are "rough" so do it to taste.
1 bag of frozen mixed vegetables (carrots, corn, peas, limas)
1 can kidney beans (just a normal sized can, drained and rinsed)
1/2 Large Onion diced
1/2 Bell Pepper diced (not in the original recipe cause I didn't have one)
3 Garlic Cloves minced
4 TBS Webers Hot Relish (Any brand should work, or some pepperocinis and their juice)
2 TBS Red Wine Vinegar
Fresh cracked pepper and Kosher salt to taste
Microwave vegetables for 2 minutes or until vegetables are thawed but not hot. Stir in remaining ingredients and chill. Serve cold.
This was even better after a full day in the fridge. I kept it simple but you could add herbs as well.
