I have learned that being next to the guy who sells peaches at the Farmer's Market has its advantages. A week back he gave me a big bag of peached that were to ripe to sell. I made cobbler.

Filling
6 cups sliced peaches
2/3 cup or less, sugar (depending on how sweet the peaches are)
3 tablespoons water
2 tablespoons lemon juice
2 tablespoons water
1 Tablespoon cornstarch

Crust
1 cup all purpose flour
1/4 cup sugar
1 teaspoon baking powder
1/2 teaspoon cinnamon
3 Tablespoons butter (soft)
1 beaten egg
3 Tablespoons milk

Place the peached, sugar, water and lemon juice in a sauce pan and cook until peached soften a little, maybe 5 minutes, stirring a couple times. Add water and cornstarch and stir gently until thick, cover and remove from heat.

In a bowl mix the flour, sugar, baking powder, cinnamon. Cut in butter and mix until crumbly. Add egg and milk and stir just to barely mixed.

Pour filling into a pie pan and spoon crust mixture onto top in 6 or so big spoonfuls. Bake at 400 degrees for about 25 minutes.

You can also do this with apples.
