Feta Salad Dressing

Okay, sorry that took so long, guys. Here's the recipie for my feta salad dressing...

1 pkg feta cheese (try to find a brand that has less salt than athenos)
1-2 large cloves of garlic
salt
fresh cracked pepper
extra light olive oil
lemon (maybe)

Open the feta cheese and cut it up into smaller chunks. Put it into a food processor. Peel the garlic cloves and put them into a mortar and pestle and grind that with a half teaspoon of salt. Scrape most of this into the food processor. Pour a half cup of olive oil to start with and blend. Add olive oil until the mixture is soft but not soupy, about hoummus texture. Taste. If it needs more garlic, add it now, it needs alot of garlic to taste good. Crack some pepper into the mixture and blend again to disperse. Taste. Should be good now. If you want some tang in there, add lemon.
