Diva Q Carrot Cake Bars for a crowd (pic)

This carrot cake bar recipe will really feed a crowd. It is perfect for BBQ's church gatherings etc.

12 eggs(beaten)
6 c flour
6 c sugar
6 tsp baking powder
3 tsp cinnamon
1.5 tsp ground ginger (optional)
1 tsp nutmeg
2 tsp baking soda
6 cups finely shredded carrots
2.5 c vegetable oil
1.5 c toasted chopped pecans or walnuts(optional)
1.5 c raisins (optional)

Mix the wet together.
Mix the dry together.
Mix them both together.

Pour into 4- 11 x 17 well greased baking pans.

Bake at 350 for 20-30 minutes.

Cool for a couple of hours.

THen ice them with :

2 pkgs cream cheese
6-8 cups of icing sugar
2 tsp vanilla
2 tsp water
1 cup butter

Mix these together adding more icing sugar if the icing is too runny.

Whew Diva..that looks good. Thanks for sharing. I am sorta skeered to go to churches cuz of the danger of getting hit by lightning and stuff..but know I find some good use for this somewhere. I just love good carrot cake.

Another good tip is to soak the raisins overnight in some good rum.

And also if you use some sweet smoked walnuts or pecans it takes it to a whole other level.
