This is the original file I copied off of Ray Basso's board ~ Don't remember who posted it though. I think it was on their old recipe board. (I thought I posted this here before...)
Cincinnati Chili
This chili is a bit on the hot side. We always double the recipe and it still only lasts 2 or 3 days. :~) We use to add the kidney beans but the last couple of times we left them out. Both ways are very good. Adding cheese adds a nice twist, too. This recipe was found on Ray Basso’s bbq forum.
1 small can tomato paste
1 tsp Worcestershire sauce
1 large onion ~ chopped
2 cups water
½ tsp garlic powder
2 tbsp chili powder
½ tsp black pepper
½ tsp cayenne pepper
½ tsp cumin powder
½ tsp allspice
½ tsp cinnamon
½ tsp cocoa powder
1 lb ground beef
2 bay leaves
spaghetti noodles ~ optional
cheddar cheese ~ optional
kidney beans ~ optional
Brown ground beef and drain.
In a large stock pot, add the ingredients and bring to a slow boil, then lower to simmer, cover and cook for 3 ~ 4 hours (or longer) stirring occasionally. Remove bay leaves before serving.
Options:
Serve over spaghetti noodles
Add cheese over chili
Add kidney beans
