This sounds like a good recipe for one of our cajun brethren to try.

INGREDIENTS

Amount Measure Ingredient -- Preparation Method

1 1/2 pounds cooked shrimp(may substitute crawfish tails)
1 small onion, chopped fine
2 tablespoons garlic -- minced
1/2 cup water
4 ounces plain bread crumbs
1 tablespoon Now It's Cajun or Slap Ya Mama seasoning *
1 stick butter
1 bell pepper -- chopped fine
1/4 cup cooking oil
1 can tomato sauce
1/2 teaspoon garlic powder
3 loaves french bread -- (smallish)

*Bonnie used Tony's. I use Slap Ya Mama, Steve will probably use Now It's Cajun. -keri

DIRECTIONS

Preheat oven to 375. Cooking time: 20 minutes.

In microwave, melt butter with vegetables. Chop shrimp in food processor. Mix all ingredients together. If too thin, add more bread crumbs. It should not be dry. Cut French bread lengthwise and scoop out centers. Fill bread with filling and bake until crisp. Cut into slices and serve hot.

Notes - blend the melted butter, vegetables, and chopped shrimp ahead of time and throw it in a ziplock on ice. Cut the bread, hollow it out, and fill it with the shrimp/vegetable mixture. Either run your smoker up hot or make a low indirect fire in your grill to "bake" it for 20 minutes. WSM with lump on turbo mode works well, especially if you have a pizza stone or even a perforated pizza pan to set the loaves on - just watch the bottom of the loaves for too much browning.
