This is from a past post at another Forum, it's delicous.

Black Bean Salad

2 14oz cans of black beans, drained well
1 Cup Frozen or fresh white corn
1 10 oz can of Mandarin Oranges, drained
1/2 White onion, chopped
1 Red Onion, chopped
1 Serrano Chile, minced (or more)
1/2 Red Bell Pepper, chopped fine
1 Tomato, chopped

Dressing:

1/3 Cup Orange Juice
1/4 Cup Light Olive Oil
1/4 Cup Rice Wine Vinegar
1/4 Cup Chopped Cilantro
1/2 Teaspoon Dijon Mustard


Combine all ingredients in a large bowl. Combine dressing ingredients, pour over bean mixture, stir well and chill for one hour, stirring occasionally.
