I like rubs like this for brisket. I had some left over and used it last night on direct-grilled (to start), thick pork chops. It was very good; I'd do it again.

1/4 c coffee, ground into a powder from fresh beans

1/4 c cocoa (Dutch-processed, preferably)

1/2 c brown Muscovado sugar

1 Tbls dried thyme

1 Tbls onion powder

1 Tbls ground New Mexico hot chili powder

1 tsp ground ginger

1/2 tsp ground allspice

1/2 tsp ground cinnamon
