Chili Sauce

1 peck tomatoes (about two gallons or 15 pounds)
2 C. vinegar
2 C. ground onions
2 C. ground green peppers
2 C. sugar
2 t. cinnamon
1 t. cloves
1 t. cayenne
2 T. salt

Coarsely chop tomatoes and run through a food mill to remove skins and seeds.
Add tomatoes to the remaining ingredients in a large pot and bring to a boil.
Turn heat down enough to maintain a low simmer. Stir occasionally to check for sticking. Cook until it thickens to the desired consistency.

Makes about 7 pints.
