I need a recipe for the Ultimate ABTs. I did a search and there are a lot of recipes. I need something tried and true and that you love. I have two 18 hole racks so I'll try more than one recipe. Thanks!
 
I've been maken Surfin Sappos for about 2 years now. Half cheerizo (sp) half cream cheese. Wrapped in baccon.
 
Here's mine.

Combine all ingredients in a ziplock bag, then snip the corner to pipe into the peppers.
1 Pint cream cheese.
1 Cup of finely chopped smoked meat ( pork, beef, chicken, turkey)
1 Tablespoon Horseradish
1 Tablespoon fresh chopped garlic
1 Tablespoon fresh chopped onion
2 Tablespoons fresh lemon juice.
1 Tablespoon BBQ rub
Salt & pepper to taste.
 
ScottyDaQ - How many good sized ABTs does this make?
I have two 18 pepper racks, but will probably only use one at a time. After seeing Larry's ABTs at the Wolfe Pit I doubt the racks are needed.
 
To add something different to the standard cheeses we will go for the crunch factor. Soak some sliced water chestnuts in, say teriyaki or Siracha and place in center. Pineapple chunks or other fruit, small peppers, even baby corn . The list goes on with the point being an unexpected change of texture and taste at the right time. We also use different types of peppers as a base to change things up, like an Anaheim or something similar. Steve.
