Taco Stuffed Baked Potato

Here's tonights dinner. The wife wanted tacos and I wanted something to go along with a baked potato, so the taco stuffed baker was what I came up with. Easy to do and it was pretty tasty. I'd do it again.

My wife made up some quick and easy salsa and gaucamole to snack on while we watched football and waited for the potatoes to cook.

Now, I'm ready for a nap.
