Hmmmm I'm gonna have to give one of them a shot Sapo. They had those in the stores and I wasn't sure..... Good looking meal. How'd the stuffing turn out with the smoked oysters? I've had stuffing with fresh oysters, but never smoked.
 
The stuffing rocked with smoked oysters in it and the turduchen was great with smoke flavor... I took the turduchen to about 180.. Larry I think my maverick crapped out on the smoker input channel.. stays at 195 forever.. I had to use 2 mavericks for the cook... I got my probe anyway..

It was good. The duck tasted great.. I think the whole thing was injected too. The flavore was awesome. I can't really say what it tasted like ...except maybe a "turduchen"....You can order them too... It was Tony's brand.. Not a full one, but only a roll,,, I will make it again for sure,,, :D
 
Smoked duck is the only way I like it. I have never tried a turduchen.
