Looks like a trip to West Seneca is in order again. Im gonna start charging Witt for gas everytime I have to go pick up free food :roll:
 
Steve anytime your south of the border, Nick I get the recipe posted when I get a chance...been working 13 days on one off... :x John you still need to pick up your white cooler.......Link I got the smoke house at the Sausage Maker Inc...its the Insulated Stainless model...and does well with jerky, I've used it for Slim Jims,brown and serve breakfast sausage,pepornini, salami, bacon, Canadain Bacon, Ham, and Pastrami and sasuage.....the only draw back is it's size it holds about 20lbs if meat.

Well that could be my Christmas present. Hey Witt, do ya think it will go well with my birthday present?
 
Oh yeah it would go real well with your Bday present....just make sure she orders the insulated one...I like the stainless it was a little more but IMHO worth it....you could have all kinds of fun with the smokehouse...its real easy to use and the end product is aswsome...
 
Got a theory on Slim Jims (or most any other narrow gauge sausage) that a person could skip the sheep cases and just extrude em on out like snakes onto a wax paper lined cookie sheet then keep em cold and/or partially froze till the cure sets up enough to firm em up. Then you just got to keep laid flat on racks when they go into the smoker. Done breakfast links like this several times and they turned out real good. Be similar to a skinny fatty.

The damn Yankee fool had hair made outa' some kinda' sausage!
I almost fell out of my big fat "Lazy Boy"!
I done said to myself(Talkin' to myself now) I said self, that just ain't right I sho do hope I's don't sees dat dere Yankee on my TV again!
Next thang you know dem damn Yankees will be knockin' on the border of my fine state!

Well glad you brought up this obvioiusly sensitive topic. I think we need to add a few stars to the flag and bring em into the fold. We way too intertwined to try to keep em out. We gonna be swimming the River Southbound if the big companies keep on setting up shoppe down there. Aint sure whut them politicians is smoking these days. They bound to be mo glader to see us than the rag heads..and they got oil too I think. Seems like a no brainer to me. The price of Tequila bound to go down. Just thinking out loud here.
