The plan was to grill salmon cakes for dinner......after cutting the grass, the building clouds, the heat, humidity, etc......cooking them inside was a much better and COOLER idea.
So in an effort to eat more heart healthy and try to get my cholesterol lowered I made basic salmon cakes. Salmon mixed with egg, bread crumbs, low fat mayo, fine chopped onion, little granulated garlic and S&P. Lightly saute'd in EVOO. Mixed lowfat mayo with dill relish and about a tsp of sriracha sauce.
Served the cakes on toasted whole wheat English muffins, lettuce, tomato and a healthy dollop of the kicked up tartar sauce. Excellent healthy dinner if I may say so myself!!
