The last chili competition I competed in was in South Carolina. No rules. So I made real Texas red (maybe Stogie gave me the recipe?). Spent a long time cubing up the beef. Lost to a veggie chili, a seafood chili, and something that I swear was a gumbo, as well as everybody else.
No more non-certified comps for me.
