I had something like this at a local brewery Friday night (Firestone/Walter Brewery). My friend and I both thought it was the best ever. Here's my rendition of it for lunch today. The friend came over and said it was pretty much spot on. I'm not a huge fan of thick pizza crust or oozing cheese so this was perfect.
Roasted Tomatillo Sauce

1/2 pound of cooked pastor - off the upright rotisserie
Burrito sized tortillas
Pastor, tomatillo sauce, and pizzas before cooking
