Made these for lunch today while I had the beef ribs in the smoker. Turned out pretty good. I gotta work on my surgery skills though. I think I over cooked the peppers when I was blistering them on the grill. So as I was taking out the seeds and stuffing cheese the peppers where tearing a little. Ended up with one batch of fried mozerella when a pepper ripped open right over the frying pan. But the first two peppers turned out good and here are the pics of those:
