Many of us have had our differences here and I for one have been the biggest jerk on the board at times and these guys have accepted me the way I am! Guess what I'm trying to say is we'll all have our differences in opinions of cooking BBQ or something else at one point or another. There is no right or wrong way of making good BBQ, just different ways of thinking. Take it with a grain of salt.
Even if you decide not to come back at least PM Cappy or post about making crispy skin, cause he is going to worry the BBQ sauce out of everyone until he learns how to!!

Ok, Lets try this again.A few thing's about me, I have been in the barbecue business for 10 years now.Business is good. I hope to open my take out place this fall.A few things I just cant tolerate is Kingsford charcoal briquettes and cooking with LP gas. There I said it. But that's just me, If you cook with gas or Kingsford and are happy with your results that's fine. It's just not for me.I have had the opportunity to cook on a few different pits over the years, Klose, Lang, Big Green Egg, Southern Yankee, Treager, Ole Hickory, Southern Pride, ECB, And the ever so popular and bullet proof WSM. Just to name a few. So I think I know what I'm talking about when it comes to Barbecue.I just prefer the direct method with my home made pit.Until the day comes and I hope some day it does, When I can cook a hog and compare it to a gas hog and the gas unit putt's out a better or equal product. I'm sticking to my guns.As I said before, That's just me. If any one is happy doing it there way with gas that's fine by me.So as Paul Harvey would say, "Now you know the rest of the story" So lets bury the hatchet and not piss in each others bowls of Cheerios.
