Brown a couple of boneless/skinless chicken breasts in olive oil with a handful of chopped garlic
Add fresh squeezed lemon juice
Cover and simmer for 25-30 minutes
In the meantime fry up some potatoes
And dig through the refrigerator to see what you have for a salad. Olive oil and red wine vinegar did the trick for me
