One of my favorite ways to do chicken. Brown it in olive oil with garlic, add fresh lemon juice, cover and simmer for 30 minutes. Uncover and cook it down, save the scrapings, add water and make some red eye gravy. Cut up the chicken, add some of the red eye, pick a side dish (We had a Caesar salad, have to eat healthy now & then) and enjoy.
