I know this is late notice, but we plan to serve carrots for dinner tomorrow and left to our own devices, we'd steam them then tossed with butter and S & P. Any suggestions for kicking them up without sugar?

you're asking a lot with out using sugar.

you could try this with splenda instead of brown sugar.

ingredients
3 pounds frozen crinkle cut carrots
1 stick butter
1/2 cup brown sugar
1/2 cup orange juice concentrate
2 ounces Jim Beam® Bourbon

Cooking Instructions
Boil carrots until almost tender, drain. In saucepan, heat butter, brown sugar, and orange juice concentrate until bubbly. Stir in Jim Beam® Bourbon and remove from heat. Place carrots snuggly in baking dish. Pour sauce over carrots and bake uncovered for 1 hour at 325 degrees.

A pal makes "copper pennies" at the American Legion. But it has brown sugar in it, and he won't give up the recipe. Got tomato juice in it too. They are tasty. I don't like carrots, but I eat those! Sorry, no help from me.
