Paul Kirk took James and Lola Rice's cooking class a couple of years ago and there is a picture out there with Paul wrapping brisket and putting back on a cooker.

I've taken a class with them too !!!!! They do it completely wrapped in foil.
The class takes less time and is far juicier.
