JB the red beans and rice with Tasso looks excellent. In Chicago at the Paulina Meat Market they ship Tasso up your stompin ground. Not cheap but TAAAASSSSTY. The recipe looks far superior to what I usually make and will give it shot when the cooler weather rolls in.
