For those of you who have access to eggs direct from the hen, or from
the store or farmer who owns the hen:

I have fresh eggs from hens, and have been avoiding hard boiling
them because they are just too durned hard to peel.

Cooks Illustrated to the rescue!! AGAIN!!

With a thumb tack or map pin, poke a hole in the WIDE end of the egg.
Place the eggs in COLD water, bring to a hard rolling boil. Turn off
the heat, cover and let sit for TEN minutes.

With a slotted spoon, remove the eggs from the hot water and plunge
into an ice-cube and water bath and allow to sit til the eggs are cold
all the way through.

Crack and roll, til the peel is loose, peel.

So far this has worked with nary a crumble, scrape, missing chunks of
egg or bad language.

If it is a problem free adventure, what will I use as an exuse for my use of 'words you cannot say in front of your mother"? :roll: :LOL:

I think they made George Carlins....7 words you can't say on live radio :LOL:
Its ok they need to be exposed to that stuff...cuz they would never hear it at home 8)
 
Or just wait until they are a little older. New eggs are harder to peel than eggs with a few days on them.

:idea: You can use the water test to check the freshness of eggs.
1. Fill a pot (or bowl) with enough water to more than cover eggs.
2. Put eggs in water
3a. Eggs that lay flat on the bottom are very fresh
3b. Eggs that stand up (but do not float) are older, but still usable (these peel easier)
3c. Eggs that float and do not touch the bottom should be headed to the garbage.

I didn't know that. Something new learned. Thanks for sharing.
