I found a new butcher for my comp brisket last year. I used him for the final cook of the year at Dover Downs and took a third place (brisket).
So I'm back talking to him last week (bought a brisket for a test cook) and he invited me to come in on a Monday (they are closed) when he breaks down the beef sides for the weeks sales.
Could be fun and may learn something.
Not many places cut their own sides anymore.
 
That sounds like a really cool thing to do. I would jump on a chance like that in a heartbeat!!!!!
 
Sounds like a good time....I remember when there were real butchers and not hack and packs...wish I could find one around here
