Well of course ya kin Boy. One note from JB's pallet The crawfish meat tasted like it was double spiced or boiled in Swamp Fire season extra strong, (twice the recomended amount)
 
Well, I just got the hog casings and 2 lbs of boudreaux's crawfish. I have the rice allready. Time to hunt for a killer recipe. :shock:
 
KitchenAid is a great sausage maker/stuffer unless you're into serious quantities or mind cleaning up the mess.

Looked like a pretty good recipe's on the front of the package. Just make sure you add chile and a little rum. Rum is good with crawfish. And make sure you get enough fat in there. Folks always screw up charcouterie by not using enough fat. Especially when it's butter. Can't have too much butter. You might also want some crab boil in their too. Crab boil's good with shellfish.

Swamp fire is a crab boil mix, XX spicy & hot.
