Chorizo help

It's poker night.

Decided to do make your own quesedillas/soft tacos.

Anyway, we have a growing Hispanic community here, and the grocery stores are stocking lots of Mexican food. So I decided to pick up some authentic chorizo to serve.

I ain't no chorizo expert, but this log wrapped in plastic appeared to be wrapped in a casing, but it wasn't. so I threw it in a pan to cook, and now it looks like pool hall chili!

I was expecting to slice it like a kielbasa or something...somewhat confused here...
 
heck, it's just the poker guys...I lost last week, so I don't care if they eat s on a shingle!

I just wanted sliced sausage on my quesadillas! Guess I'll just spoon on some Mexican chili!
 
That's all the "good" news! Real chorizo, is made mostly from organ meat! I like to male chorizo and cheese tamales. It is also great with scrambled eggs , beans and tortillas for breakfast! Wood
