A month or so ago I bought a whole beef tenderloin at Costco. All that was left was four pieces from the small end. I figured I would make some kabobs, or some such with the pieces. Instead tonight I was hungry for chicken fried steak. So I put each piece between saran wrap and pounded them until they were about a half inch thick. Chicken fried steak, mashed potatoes, gravy and pear salad (pieces of pear with honey/lemon juice mix, pieces of pecans and blue cheese crumbles). It was agreat Sunday night dinner.

Dang...never had chicken fried steak made out of a tenderloin. Bet that was good. There is some fancy restaurant down here that advertises making them out of Ribeyes. Think you got em beat:)
