Chevilotta Sausage - Ever Hear Of It?

Picked up some more of my butchers rope sausage stuffed with mozzarella and Parmesan cheese. They call it Chevilotta sausage; I’ve been Italian for 66 years and have never heard of sausage by that name. An Internet search fails to bring it up so I’m guessing they made the name up. Anyway, it’s very good with peppers & onions and one of my whatever is in the refrigerator salads.

Looks good. Think you may be mis speeling it. Seems like it a kissing cousin to Salami and summer sausage perhaps. I have ate it before but didnt speel it thataway. Play around on Google and change up the letters a bit. I bet you find it.

Name don't show up in "The Great Book of Sausages" book neither. Must be some type of original creation or regional speciality.
