Is that a handsigned pic of Sean Connery you got there?

JB, is it common practice to make a dark roux first and then a blonde roux towards the end of the cook? Could a person make more dark roux and then add less water to make the gumbo thicker? Also would more file added thicken it up good? Was that giant pot really needed? It seems like you had problems getting you arms in there to stir things up. I bet it was really good Gumbo. Good job to the Baton rouge Pizza King!! :D

I thought 2 cups was gonna be enough roux but it wasn't for that much meat n stuff. The next smaller pot was 12 qt's It would have full to the top Thats why I used the 24 qt
