My brother-in-law stopped by today and dropped me off a nice treat. He works at an apple product food plant. They were setting up to run apple cider vinegar today and he grabbed me 2 small jars of stuff.

One jar is an apple concentrate, thick like syrup... they mix 1 gallon of this stuff to 6,500 gallons of vinegar and water.... this stuff is strong....industrial strength!

The other jar is apple essence... it's clear as water and just as thin and has ABSOLUTELY no taste at all..... but crimminy, it's definately apple scent...and I mean strong! He didn't say the ratio they mix that or with what.... but I dipped my finger in it, then wiped it on a napkin.... left napkin on the table for the rest of the afternoon because it had the kitchen smelling of fresh apples better then any air freshner I have ever bought.

First thought for both of these is brining and smoking some bacon.....

Anyone have some other ideas for me?
