An oldie but goody - Pork Chops & Rice

Brown the pork chops and add one can of Golden Mushroom soup mixed with water. Cover and simmer for 30 minutes. In the meantime cut up as much peppers and onions as you want. After 30 minutes add the peppers & onion, bust open one of those bags of Boil In rice and add that too. Cover and simmer another 30 minutes and you’re good to go.

I did a cold green bean & red onion salad with finely chopped garlic and fresh lemon juice.

Not fancy, just down home cooking.
