Last year at comps I saw some off-set smokers that had 5 gal water jugs mounted on them. It looked like a hose from them was feed into the smoker somewhere.
Whats the deal with them? Is this to create steam? At what rate is the feed? (5 gal seems large) Anybody think this improves the cook?
 
The only ones I have ever seen are used for hot water, to be more sanitary. Looks like a turkey cooker with a spicket on it. Never heard of having a hose on them.
