My test burn turned into the best chicken I have ever cooked
So my plan for today was to test my new USD. I fired up my coals at about 10am and was able to easily maintain a solid 250 on the bottom rack and about 275 on the top. It was just killing me to have the smoker going and not be cooking anything so I sent the wife to the store for some chicken.
I injected the chicken with some Tuscan roasted garlic balsamic vinegar salad dressing and appilied a good coat to the outside as well. I then dusted the chicken with oregano and some ms dash. I smoked the chicken for about 1:15 min at about 260. I will post pics in a min.

Looks like your chicken blew up. It's in pieces. You have to be careful with UDSs they tend to do that some times. Great job in spite of the destruction of your bird.

They make the best chicken. No need to sear than move off set. I just cook em at 400 cook 10 min per side. We just got 7th in chicken. Out of 7 teams.
