Had a friend put a couple of trays in between my gas burners
and my meat grate....now I can cook with coals with or without
gas...but he put in grates with holes big enough to let burning
embers fall through, and my pit has air holes on the bottom.

How do I solve this problem? Should I buy pans to put the coals
into?

Fire in the hole!!! Wow, used about 3/4 of a bag of kingsford,
and that's way to much!!! Then compounded by putting to
many chunks of hickory on!

My therm is pegged at 500!!!! lol

learning as we go.

threw some leg quarters on

ain't got no dampers...got plenty of ash though....
can't make a silk purse out of a sow's ear.

All is not lost though....gonna do a few more leg quarters
in a while when it cools down some (both the grill and the weather).
Will use just a tad bit less charcoal.
