Pound a couple of chicken breasts and brown in olive oil with a handful of garlic. Add your favorite sauce, cover and simmer for 30 minutes. Top with mozzarella (I like to mix some grating cheese in with it) and cover for another couple of minutes. We usually just do a salad but a side of spaghetti goes nicely as well.
