SPAGHETTI ALLA CARBONARA

1 (1 lb.) pkg. spaghetti
3 eggs, beaten
1 c. grated Parmesan cheese
1/2 c. milk
1/2-1lb bacon, cooked & crumbled
1/4 c. chopped fresh parsley
1/4 tsp. dried whole basil
1 clove garlic, crushed
1/2 onion finely minced

Cook bacon and crumble. Set aside. Cook onion and garlic till lightly brown in bacon grease set aside & drain.

Cook spaghetti till drain set aside

Combine eggs and cheese, stirring well. Warm milk in a heavy saucepan. Stir in bacon, drained onion, parsley, basil and garlic.

Pour over spaghetti add some pasta water if too dry
Season with salt and pepper and more cheese if wanted.

It is truly a comfort food. I am just waiting for the pasta to boil. Sometimes I also throw in some red pepper flakes or white wine but no matter what it always seems to turn out yummy.

Diva...I use panchetta vs. regular bacon...much very good! :D

When I can find good pancetta I will use it but all I can find lately is just a lot of really fatty pieces.
