We make these every year. This is enough for two 9x9 pans

I really like the taste of molasses. But if you do not just use light brown sugar for the regular granulated sugar in this recipe.

1 cup butter - please do not substitute marg.
2/3 cup granulated sugar mixed with 1 tablespoon molasses
2 1/2 c flour

4 eggs
2 cups granulated sugar mixed with 2 1/4 tablespoons molasses
1/2 c flour
1 1/2 tsp baking powder
1/2 tsp salt
3 cups raisins
1 cup chopped walnuts (optional)

For the bottom: Mix the first three ingredients into a bowl divide into half and press each half into a 9 x 9 pan. Bake at 350 for 10 minutes

For the top: Mix the eggs and sugar together well. Add the rest of the ingredients mixing thoroughly.

Divide the topping between the two pans

Bake at 350 for 30 minutes. Cut into squares when very cool and set.

These freeze well.

Another variation of this is to take the topping and fill in store bought pre made tart shells. Just pre bake the tart shells for approx 10 minutes pour into the shells the topping and bake for about 20 - 25 minutes depending on the size of your tarts.

Either way they taste yummy.

I will post a pic when they cool.

My grandmother, who lived in Canada, use to make these all the time, she made them in the tart cups, they were great. Thanks for the recipe!!!
