Tabasco Lemon baste/sauce

This is a simple recipe that’s mouthwatering on grilled chicken or fish. It should work on ‘Qued chicken too.

The quantity below will last for 3-4 chickens at least.

It’s sweet and salty with the zing of lemon and Tabasco. The Tabasco adds a great flavor compliment to the lemon. Try it.


Tabasco Lemon Sauce
¾ C fresh squeezed lemon juice
½ C oil
¼ C water
3 T sugar
1 T salt
1½ t Tabasco or more, i.e. to taste

T = tablespoon
t= teaspoon

Despite the Tabasco, this sauce as described doesn’t have much of a kick. You could serve it to almost anyone.

Chicken
I start with a brined chicken. Grill chicken ‘til it’s within 10-15 minutes of being done. Baste with Tabasco Lemon sauce liberally through serving. I also pass this sauce at the table too.

Fish
I’ve marinated salmon & tuna in the sauce for 30 minutes prior to grilling. The fish just isn’t on the grill long enough for the sugar to burn. Again, I pass the sauce with the fish at the table

This sauce is also good over grilled veggies. I suppose you could marinate the veggies for a short while prior to grilling too.

I did not invent this recipe. I got it from good old Mom, and she thinks she got it from a Tabasco bottle a long, long time ago.
