Mrs. Pen's Tomato salad..We grew up with this salad being a summer staple around our house. My Dad and Grandfather always had awesome gardens, so most of the stuff in the salad was picjed fresh daily...You'll notice no quantitys..adjust to what you like and season to taste..After the tomatoes and everything else is gone, the juice thats left makes an awesome marinade, base for soups or sauce etc. As summer wears on and we have this more, we have a tupperware container that we keep in the fridge that we keep the leftover juice in to cook with.


Red onion
White onion (sweet or Vadalia)
Celerey ( I like to use the hearts and add the leaves)
Green Pepper
Cucumber
Tomatoes (diced, sliced..Whatever your pleasure)
Fresh basil
fresh parsley
oragino
garlic (powder)

Mix together and season with salt and pepper, olive oil and a touch of balsamic viniger. Let sit for a few hours in the fridge before serving...

 
Great salad John. I love salads like this in the summer time. Light, refreshing, not drowned in dressing. Gonna make this one for the weekend.
