Gumbo
 
I made a GREAT Smoked Duck and Andouille gumbo today. It took a LONG time to get the roux dark enough. About 1.5 hours. Best gumbo I have ever made!

Good job there WoodGumbo!! It looked like a shrimp to me. Not that there's anything wrong with that.

Youngest won't eat sausage so I hadda include some shrimp for her. I just kinda stirred in some cooked ones at the end! Nick. I used Emeril's Duck and Chicken Gumbo Recipe (food network.com) but smoked it and substituted Andouille for the chicken. Also, I added three cans of rotels.
