Hey Ed,

Back when you 1st joined, (10 or 11 days ago lol) I checked out your website ~ Very Nice!! I noticed that you cook everything in foil pans and in their own juices which pretty much eliminates clean up. I'm sure that at some point though, you cooked butts and what not in such a manner as to let the juices drip away from the meat. I'd be interested in hearing your thoughts on the differences in meat texture, taste, smoke ring, etc. when cooking both ways. Thanks

Pans

Having smoked both using pans and not, I prefer to use the pans. First, there is no clean up, but more important than that I think the meat is much more moist.
When you get done with the smoking, there is about 2-3 inches of the best juices from that meat in the pan. I pour a beer in the pan when I start it smoking and the fat renders and Man is that juice good to pour a little back on after you have pulled it!!!!
You should try it using the pans like I suggest and you can then tell me what you think. It works for me.
