Any body have a quick recepe for pheasant breast? My neighbor just dropped off a few breasts and I'm gonna grill them up for dinner tonight.
Thanks

Pheasant is really dry. Wrapping them with some bacon strips helps. Of course, I can't think of anything that isn't better when wrapped in bacon.

Does that work for all breast meat?

Sure, the fat and flavor from the bacon will help basically whatever you wrap it in. When wrapping meat in bacon, be careful adding additional salt. Otherwise it'll be too salty.

I gave them a lite EVOO coat, then sprinkled with KC Masterpiece BBQ Seasoning. Grill them for about 3 - 4 minutes per side. Pretty tasty.

See if you can score some fat netting.... ya know, that stuff on Iron Chef?
AKA "Caul" ... AKA ... "the outer lining of the stomach and intestines of animals"

Or... ummmm bacon is good too. :!:
